Tomato Egg Soup 番茄蛋汤

Instead of making tomato egg-drop soup (similar to <a href="https://teczcape.blogspot.com/2011/10/bitter-melon-egg-drop-soup.html">Bitter Melon Egg Drop Soup</a>, <a href="https://teczcape.blogspot.com/2012/05/chive-and-egg-drop-soup.html">Chive Egg-Drop Soup</a>) in which the egg is gently stirred into the soup towards the end of cooking, to create pretty, soft and silky egg swirls and ribbons;  I switched the sequence a little - first, by frying tomatoes with egg (<a href="https://teczcape.blogspot.com/2015/08/tomato-scrambled-fried-eggs.html">Tomato Scrambled Eggs recipe</a>), then adding the tomato scrambled eggs to a vegetables-based broth, making the soup of today - <b>Tomato Egg Soup</b>.<br /><img src="https://farm8.staticflickr.com/7474/16348479101_e344245afc_z.jpg" /> <br /><br />The sweet tomatoes impart natural <i>umani </i>flavors to this soup and it is absolutely delicious. Soup season is here! A comforting and satisfying one-dish noodle soup is definitely a keeper in the cooler months ahead.<br /><a name="more"></a><br /><img src="https://farm8.staticflickr.com/7543/16164035369_ee4be661c2_o.jpg" /><br /><br /><iframe align="left" frameborder="0" marginheight="0" marginwidth="0" scrolling="no" src="//ws-na.amazon-adsystem.com/widgets/q?ServiceVersion=20070822&OneJS=1&Operation=GetAdHtml&MarketPlace=US&source=ss&ref=as_ss_li_til&ad_type=product_link&tracking_id=anestofo-20&marketplace=amazon&region=US&placement=B076HV5HLS&asins=B076HV5HLS&linkId=fd58dbd053d4116c228f6e3ab8b35361&show_border=true&link_opens_in_new_window=true" style="height: 240px; padding-right: 10px; padding-top: 5px; width: 120px;"></iframe><b>Tomato Egg Soup 番茄蛋汤</b><br /><i>Ingredients</i>:<br />3-4 medium size tomatoes, divided use (2 tomatoes sliced to wedges, 2 tomatoes chopped to bite-sizes)<br />3 organic eggs, lightly whisked<br />1 shallot<br />2 green onions, finely chopped, separate the white and green portions, divided use<br />2 cloves garlic, thinly sliced<br />1 cup chicken stock or vegetarian stock (or water)<br />1 celery thinly sliced (optional)<br />1/2 organic green bell pepper, thinly sliced (optional)<br />Salt and ground white pepper to taste <br /><br /><i>Directions</i>: Fry the tomato wedges and eggs with 1/3 of white portions of green onions in 2tbsp cooking oil (refer <a href="https://teczcape.blogspot.com/2015/08/tomato-scrambled-fried-eggs.html">Tomato Scrambled/ Fried Eggs recipe</a>). Dish out and set aside. Fry the shallots and remaining white portions of green onions in 1tbsp cooking oil, then add garlic and lightly saute till shallots turn slightly translucent. Add the stock or water and let it come to boil. Lower heat and simmer for 5 minutes. Add the bell pepper and celery and let it cook in the simmering broth. (<span style="color: blue;">Note</span>: Celery and bell peppers are optional. I added them because I had them in the fridge, and wanted to add some vegetables to complete my one-dish meal). Return the tomato and eggs back to pot, pinch of salt and pepper to taste. Drizzle in 1-2 tsp of sesame oil. Turn off heat. Cover pot and allow to sit for 2-3 minutes, allowing all the flavors to come together. Red Leaf Amaranth Soup

Amaranth. Is it a <a href="https://teczcape.blogspot.com/search/label/amaranth">grain</a>, <a href="https://teczcape.blogspot.com/search/label/amaranth">seed</a> or vegetable? While amaranth has been cultivated as a grain that is a good source of trace minerals and vitamins, the amaranth leaf vegetable is equally nutritious, particularly high in iron content. I hardly buy them till I saw the young tender Red Strip Leaf Amaranth (large green leaves with red stripes in the center) at the farmers market. <br /><img src="https://farm1.staticflickr.com/702/20045108393_9cc97a63f6_z.jpg" /><br /><br />At the same time, after watching a cooking segment about how amaranth and gojiberries support healthy vision (or for myopic like myself - to slow down vision deterioration), I was inspired to go searching for amaranth leaf vegetable so that I can try cooking it at home. In the cooking segment, the chef made a clear soup of amaranth vegetable in homemade chicken stock. Add the gojiberries and simmer for 5 minutes. Baby Kale Soy-Bean Soup 羽衣甘蓝黄豆汤

<a href="http://teczcape.blogspot.com/2013/01/soybeans-ikan-bilis-stock-broth.html">Soy-bean broth or stock</a> is quite versatile and I absolutely enjoy it as a light-tasting broth for green vegetables e.g. <a href="http://teczcape.blogspot.com/2013/01/gai-lan-chinese-broccoli-soup.html">Chinese Broccoli Soup</a>.<br /><img src="https://farm9.staticflickr.com/8182/7989537227_b86b8fb7c7_z.jpg" /> <br /><br />For this soup (adapted from <a href="http://teczcape.blogspot.com/2013/01/gai-lan-chinese-broccoli-soup.html">Chinese Broccoli Soup</a>), some carrots were boiled in the broth till cooked, then <a href="http://teczcape.blogspot.com/2014/01/baby-kale-with-garlic-and-shallots.html">baby kale</a> and some leftover <a href="http://teczcape.blogspot.com/2016/02/kale-tofu-stir-fry.html">pan-fried tofu</a> were added.<br /><img height="300" src="https://farm9.staticflickr.com/8305/7989543886_8b31c914d5.jpg" width="400" /><br /><br /><a href="http://teczcape.blogspot.com/2014/01/baby-kale-with-garlic-and-shallots.html">Baby kale</a> is supposed to be milder-tasting and less bitter compared to <a href="http://teczcape.blogspot.com/2016/02/kale-tofu-stir-fry.html">kale</a>. When boiling, turn down the heat. Add kale, cover the pan and allow steam and heat to cook the kale. Salt and ground white pepper to taste.
