Easy Homemade No-Bake Protein Bars

Let's tweak the storyline today. Instead of talking about fuss-free ways to cook or, that a dish is healthy and nutritious; how about pre- and post- workout food? Yes, foods that you consume before and/or after exercise. <br /><img src="https://c2.staticflickr.com/8/7021/26734454403_8ff37f0f98_z.jpg" /><br /><br />Research has shown that one of the sweet-spots to boost protein for muscle recovery is about 10-15 minutes after exercise - in the form of snacks/beverages; and no more than 60 minutes in the form of a full-meal (meaning post <a href="https://teczcape.blogspot.com/search/label/workout%20meals">workout lunch or dinner</a> such as <a href="https://teczcape.blogspot.com/2018/08/chickpea-tuna-veggie-quinoa-bowl.html">Chickpea-Tuna Quinoa Bowl</a>, <a href="https://teczcape.blogspot.com/2018/05/chicken-broccoli-salad-bowl-with-corn.html">Chicken Broccoli with Sweet Potatoes</a>, <a href="https://teczcape.blogspot.com/2018/03/veggie-salad-avocado-and-shrimp-bowl.html">Avocado, Veggies and Shrimp Bowl</a>, <a href="https://teczcape.blogspot.com/2018/03/tempeh-broccoli-cabbage-avocado-kiwi.html">Tempeh and Veggies Salad</a>).<br /><br /><a name="more"></a><br />For those of you (and me) who do not have the luxury to weave in a balanced meal in a perfect time-frame (yes, <a href="https://teczcape.blogspot.com/search/label/workout%20meals">post workout lunch or dinner</a> usually comes at least 3 hours after leaving the gym!), the next best bet is to make sure some form of protein and carbohydrates are consumed shortly after exercise. Protein shakes or smoothies are probably the easiest on-the-go "snack". Protein bars that are less perishable is a good option as well. However, both store-bought smoothies and/or bars may hide high amounts of refined sugars which is what you do not want to consume after a worthy workout.<br /><img src="https://c2.staticflickr.com/8/7192/26815304994_5fc227d919_z.jpg" /><br /><br />Homemade is always best. These homemade no-bake protein bars are made from rolled oats (soaked overnight to soften), store-bought blanched peanuts, walnuts and pumpkin seeds, sweetened with dates and gojiberries.<br /><br /><iframe align="left" frameborder="0" marginheight="0" marginwidth="0" scrolling="no" src="//ws-na.amazon-adsystem.com/widgets/q?ServiceVersion=20070822&OneJS=1&Operation=GetAdHtml&MarketPlace=US&source=ss&ref=as_ss_li_til&ad_type=product_link&tracking_id=anestofo-20&language=en_US&marketplace=amazon&region=US&placement=B00LFVV8CM&asins=B00LFVV8CM&linkId=e064197a51beb7b754aa59a26997ef33&show_border=true&link_opens_in_new_window=true" style="height: 240px; padding-right: 10px; padding-top: 5px; width: 120px;"></iframe><b>Homemade No-Bake Oats, Nuts and Seeds Protein Bars</b><br /><i><span style="font-size: x-small;">adapted from <a href="http://www.onegreenplanet.org/vegan-recipe/plant-powered-protein-squares/">One Green Planet</a></span></i><br /><br /><i>Ingredients</i>:<br />1/2 cup organic rolled oats soaked overnight, to soften (drain away water before using oats next day)<br />5-6 pitted <i>Medjool </i>or <i>Deglet </i>dates, soaked in warm water for 10 minutes<br />1/4 cup dried goji berries, soaked in warm water for 10 minutes<br />1/2 cup raw pumpkin seeds<br />1/2 cup blanched peanuts<br />1/2 cup walnuts<br /><br /><i>Directions</i>:<br />First, pulse softened oats and dates. After a few pulses, add the nuts, seeds, and gojiberries. Then pulse a few more times. Do not over-do the blitzing or you will end up with a fine sticky paste. When ready, remove mixture from food processor, and place mixture on a parchment-lined tray and start spreading mixture out*. Cover the mixture of desired thickness with another layer of parchment paper and put into the fridge for about 1hr to set. When set, prepare into rectangles or squares (your choice) and store them in air-tight container in the fridge. *Alternatively, shape the oat-nuts-seeds mixture into spheres or balls then set them in the fridge.<br /><br /><span style="color: blue;">Notes</span>: (1) I found the bars on the "wetter" side (not as dry as expected) probably due to the moisture of the soaked rolled oats (overnight soaking might be too long). Next time, I may do only 1-2 hrs soaking the rolled oats (2) Adjust the quantity of nuts and seeds accordingly while doing the blitzing.<br /><br />The more you prepare these bars, the better you are to perfecting these bars (I have not made them again after trying this batch). Today's recipe is going to be...or wait!...let's not call it recipe. Sweet! No, it's savory! But the idea is sweet, isn't it? You can also use raw carrots and celery but make sure they are rinsed and cleaned properly). In a deep mixing bowl, mash up the sardines (option: use canned tuna), then add ricotta cheese and mix well. When evenly mixed, add the cilantro, mix again, then add freshly ground black pepper. Greek Yogurt Coleslaw

It was perhaps the sudden urge to make coleslaw at home when I saw this beautiful organic red cabbage at the <a href="https://teczcape.blogspot.com/2015/03/baby-shiitake-mushrooms-stir-fry.html">farmer's market</a>. Since it is coleslaw, I really wanted to replicate this refreshing and crisp cabbage-celery slaw salad (also check this delicious <a href="https://teczcape.blogspot.com/2017/09/celery-dates-cashews-salad.html">Celery, Dates and Cashew Salad</a>) that I have recently enjoyed while dining out. That salad coleslaw, served with beer-batter fish bites, had the perfect crunch from the cabbage and celery, tastefully balanced by light creamy mayo dressing. Chicken Hot Dog Sausage Baguette

It's summer hot dog season, and there is always a "better" <a href="https://teczcape.blogspot.com/2013/07/chicken-hot-dogs-with-kale.html">hot dog</a> to work on. When I prepared <a href="https://teczcape.blogspot.com/2013/07/chicken-hot-dogs-with-kale.html">Chicken Hot Dogs with Sauteed Kale</a> last time, I made it a point to use "better" sausages (best is to make your own), "better" hot dog buns (best to bake your own), and "better" sauce (best to have NO sauce).<br /><br />Out of these, going without sauce was the easiest (to practice). Now, can anyone tell me if <a href="https://teczcape.blogspot.com/2016/09/sardine-ricotta-cheese-spread-pate_28.html">ricotta cheese</a> is considered "healthy" cheese? Or bluntly, are all cheese(es) unhealthy? High sodium? High fat? <br /><br />So that you know, our family does not buy reduced-fat milk or half-half, always going for whole milk. On the same note, we do not go for reduced-fat, skimmed-fat cheese. For some of you wondering what Tuna Floss is, do check it out on <a href="https://en.wikipedia.org/wiki/Rousong">Wikipedia</a>. Tuna Floss belongs to this group of dried and seasoned shredded meat snack (e.g. Pork Floss, Chicken Floss) with light and soft cottony texture. Most of the times, you can find this processed food item in Asia; and in some Chinese supermarkets in the United States.<br /><br />Often salty, chicken/pork/fish floss is often used to complement bland foods/dishes, for example, as toppings on plain porridge/congee or to <a href="https://teczcape.blogspot.com/2017/05/tortilla-egg-pancake.html">fill up a sandwich</a>.<br /><img src="https://c1.staticflickr.com/5/4304/35626886090_466fafa799_z.jpg" /><br /><br />With the concept of "shredded", "seasoned" and "dried", you can jolly well make meat floss at home. I would not say it is complicated; but definitely it is a tedious process that requires patience. In fact, avid homecooks have it homemade so that they can make healthier meat floss versions. Store-bought meat floss is often over-seasoned (high sodium, high sugar) and contains added preservatives in order to make the "meat" tasty and give it a longer shelf-life. After 1 minute, turn the tortilla over again, and sprinkle fish-floss over the egg, then add 2nd piece of tortilla and flip the tortilla again (2nd tortilla is now bottom of the pan, while 1st tortilla is facing up). This is my first time trying Japanese-style roasted <a href="http://teczcape.blogspot.com/search/label/leeks">leeks</a> but certainly not my last.  I have not tried this appetizer/side-dish before in any Japanese eateries/restaurants. With sliced cheese, the fastest (proper) lunch ever, will be two slices of whole-wheat bread, sandwiching Swiss cheese and organic microgreens.<br /><br />Well. talking about trying something different, I got my hands on a little tub of whole milk ricotta cheese for the first time! From Trader Joes. The ingredient list seems acceptable: whey, acetic acid, salt. A spreadable paste that can be used as easily as...just like lathering creamy peanut butter on bread/toast and crackers. As the <a href="http://teczcape.blogspot.com/2014/08/basil-walnut-pesto.html">homemade pesto</a> (<a href="http://teczcape.blogspot.com/2014/08/basil-walnut-pesto.html">Basil Walnut Pesto</a> <a href="http://teczcape.blogspot.com/2014/08/basil-walnut-pesto.html">recipe</a>) already has cheese in there, this yogurt-pesto sauce perfectly stands in for the cheese-bacon combo often seen in hasselback potatoes.<br /><img src="https://farm6.staticflickr.com/5560/14962860066_e9d04ab65f.jpg" /> <br /><br />Of course, potatoes can be simply diced, then boiled or steamed or roasted (whichever way you prefer), then tossed with this yogurt-pesto sauce. But did I say hasselback potato just looks fancier? Slather and rub oil over the potato and in between the "slices". Preheat overn 400. Bake 45-1hr till cooked. Stuffed the Hatch chili with fried rice. Lay on baking sheet, drizzle some olive oil over the stuffed chili and sprinkle cheese or slather some pesto over the rice in the chili.<i> </i>Roast in the oven for about 25 minutes till the chili turns slightly charred on the outside and has turned tender-soft.
