Vegetarian Prosperity Salad 素鱼生

<span style="color: red; font-size: large;">Happy Lunar New Year of the Dog!</span><br /><br />Today marks the first day of the Chinese New Year, and here's wishing everyone Good Heath and Happiness.<br /><img src="https://c1.staticflickr.com/5/4618/40258146642_8396626a36_z.jpg" /><br /><br />We start the year strong and healthy with this Prosperity Salad which has been adapted and modified to suit our family preferences. Raw fish (生鱼 <i>Sheng Yu )</i> - which is why Prosperity Salad is also known as <i>Yu Sheng</i> in Mandarin. Fish 鱼 and abundance 余 also both sound alike in Mandarin, thus the tradition of having <i>Yu Sheng</i> is often interpreted as abundance, good fortune and prosperity in the new year.<br /><br />First and foremost, one of the most symbolic ingredient - raw fish  has been omitted from the salad as we do not consume raw fish at home. That said, it also means this salad is vegetarian.<br /><br />No fish, but the colors galore and vegetables aplenty in this salad marks abundance in the best way (examples of <a href="https://teczcape.blogspot.com/2018/01/lunar-new-year-vegetarian-stir-fry.html">ingredients and its symbolism</a> <a href="https://teczcape.blogspot.com/2018/01/lunar-new-year-vegetarian-stir-fry.html">here</a>).  Besides, with or without fish, it is the same act of using chopsticks to toss and lift the salad up high that symbolizes the shoring in of better luck and lifting of our high spirits and vigor in the new year. Gather everyone around the table. Start saying out loud the auspicious words, and phrases while sprinkling the green onions over the salad, then pouring the golden dressing over the salad.<br /><br />Typically, each ingredient symbolizes something good (examples of <a href="https://teczcape.blogspot.com/2018/01/lunar-new-year-vegetarian-stir-fry.html">ingredients and its symbolism</a> <a href="https://teczcape.blogspot.com/2018/01/lunar-new-year-vegetarian-stir-fry.html">here</a>) and ties in to auspiciousness (e.g. green onions means wishing for lots of  cash or "greenbacks"  in our case because this salad was prepared and enjoyed in the USA; golden garlic dressing where the color of gold means fortune, and the Chinese word for garlic 蒜 sound like 算 , meaning lots of money to count but a better representation in my opinion, is to be able to count our blessings and be grateful.<br /><br />Once dressing is poured over, everyone uses their chopsticks and start tossing the salad up high. It can be messy, but that is the spirit of Chinese New Year. Lunar New Year Vegetarian Stir-Fry 年菜西兰花芦笋清炒鸿禧菇

During <a href="http://teczcape.blogspot.com/2011/02/food-and-symbolism-chinese-new-year.html">Lunar New Year</a>, many Chinese families believe in shoring up good luck with food that symbolizes good health and prosperity.<br /><br />With good health and happiness in mind, this easy and healthy <a href="https://teczcape.blogspot.com/2015/06/napa-cabbage-bok-choy-with-mushrooms.html">vegetarian stir-fry</a> is perfect for the Lunar New Year. Season the shrimps with minced garlic, oregano, a little olive oil, salt and pepper. Roast the shrimps for about 15 minutes till cooked (or see this recipe: <a href="https://teczcape.blogspot.com/2011/03/oven-baked-spanish-style-shrimps.html">Oven-Roasted Shrimps</a>). While shrimps are roasting, start building the bowl up with salad greens at the bottom, some red onions over, drizzle a little dressing. Vegetables Stir-Fry with Tomato Sauce 番茄酱清炒蔬菜豆腐

Excluding sesame oil, the only Asian cooking sauce stocked in my pantry is soy sauce. In Asia, most <a href="https://teczcape.blogspot.com/2009/11/bok-choy-with-carrots-and-shitake.html">vegetables stir-fries</a> call for oyster sauce but without that, I have to create some kind of "sauce" base when making <a href="https://teczcape.blogspot.com/2015/03/baby-shiitake-mushrooms-stir-fry.html">vegetables stir-fries</a> (e.g. <a href="https://teczcape.blogspot.com/2013/09/sweet-and-sour-tofu.html">Sweet and Sour Tofu Stir-Fry</a>) and tomatoes come into the picture.<br /><br />Tomatoes not only sweeten up the entire dish naturally, the combination of tomatoes and soy sauce just means more flavor (more <i>umami</i>) for the dish.<br /><img src="https://farm6.staticflickr.com/5566/14815494229_687d6e44ae_z.jpg " /><br /><br />The trick to a quick Asian stir-fry of a combo of vegetables is to cook each or some of the vegetables" separately' then combine them in a quick stir-fry towards the end of cooking. If you were to add the vegetables - in the sequence of which vegetables cooks slower (added first), to those that cooks fastest (added last), the heat of the pan is often brought down when you add in something raw, thus slowing down the cooking process.<br /><br />In this stir-fry, the tofu was pan-fried, set aside. <i>Bok Choy</i> stems were also pan-seared to soften, then set aside. Thereafter, the actual all-in-one stir-fry begins.<br /><a name="more"></a><br /><iframe align="left" frameborder="0" marginheight="0" marginwidth="0" scrolling="no" src="//ws-na.amazon-adsystem.com/widgets/q?ServiceVersion=20070822&OneJS=1&Operation=GetAdHtml&MarketPlace=US&source=ss&ref=ss_til&ad_type=product_link&tracking_id=anestofo-20&marketplace=amazon&region=US&placement=B004RIY4J4&asins=B004RIY4J4&linkId=WUDYLKJBCLFHHICM&show_border=false&link_opens_in_new_window=true" style="height: 240px; padding-right: 10px; padding-top: 5px; width: 120px;"></iframe><b>Vegetables & Tofu Stir-Fry with Fresh Tomato Sauce 番茄酱清炒蔬菜豆腐</b><br /><i>Ingredients</i>:<br />14 oz firm tofu, cut to bite-size chunks or cubes then pan-fry till both sides are browned and crisp, or <a href="https://teczcape.blogspot.com/2015/04/soy-sauce-roasted-baked-tofu.html">bake the tofu</a> instead of pan-fry<br />5-6 <i>Bok Choy</i>, separate the leafy part from the stems. Set aside the leaves. Slice the stems to half, then pan-sear the half (flat side down) till softened, set aside the stems separately<br />2-3 cloves garlic, finely minced<br />1 tomato, finely diced<br />1 tsp soy sauce + 1cup of water<br />3-4 fresh shiitake mushrooms, thinly sliced<br />5-6 mini sweet peppers (or bell peppers), thinly sliced<br /><br />Salt and white pepper<br />Few drops of sesame oil to finish off the dish<br /><br /><i>Directions</i>: In a pan or pot, add 1tbsp cooking oil and fry the garlic till fragrant. Add the tomatoes and fry till tomatoes are softened and juices are released. Add soy sauce + water and cook down the tomatoes to create a sauce-mixture. Add in fresh mushrooms and fry for 2-3mins, then add sweet bell peppers and fry for about 1min. Add in tofu, mix well and allow all the flavors to combine by simmering in the pat/pot for about 2min. Add in <i>Bok Choy</i> leaves and stems, a quick toss, then salt and pepper to taste. I wish everyone many healthy and happy years ahead.</span><br /><br />Nothing fancy for the first post of 2017, just as my approach to home-cooked meals - simple and fuss-free; "simple" does not mean "done without deliberate thought". On the other hand, you have to put your heart and thoughts into preparing healthy and nutritionally-balanced meals, really.<br /><br />The last time I made this <a href="http://teczcape.blogspot.com/2015/03/ratatouille-inspired-roasted-vegetables.html">ratatouille-inspired oven-roasted dish</a>, I enjoyed it and wanted to make it again. This time, it is a vegetarian heartier lot with <a href="http://teczcape.blogspot.com/search/label/pumpkin%2Fsquash">autumn/winter squash</a>, <a href="http://teczcape.blogspot.com/2014/10/roasted-organic-rainbow-carrots.html">heirloom carrots</a>, green and red bell peppers, eggplant and Tokyo <i>Negi </i>(similar to leeks - leeks have flat green tops rather than the tubular tops of <i>Negi</i>). Tokyo <i>Negi </i>may be sharp pungent onion/leek but similar to leek, it mellows down to sweetness when slow-roasted or cooked.<br /><br />Roasting packed the vegetables and squashes with natural sweetness, imparting full-bodied flavors to the entire dish.<br /><img src="https://farm3.staticflickr.com/2944/15343798691_87b220f6c5_z.jpg" /><br /><br />Do not be afraid to load up the oven. Add soy sauce, and pinch of ground white pepper. Add the vegetables, and fry briskly for about 5 minutes till cooked. As the vegetables are all in fine julienne, the cooking is really quick. Stuffed the Hatch chili with fried rice. Lay on baking sheet, drizzle some olive oil over the stuffed chili and sprinkle cheese or slather some pesto over the rice in the chili.<i> </i>Roast in the oven for about 25 minutes till the chili turns slightly charred on the outside and has turned tender-soft.
