One-Pot Noodles with Veggies, Egg & Chicken

There is nothing special about this pot of udon noodles. Though prepared with quite the basic everyday ingredients that you find in a working kitchen, this simple homecooked one-pot noodles is still very flavorful and satisfying that you slurp till the very last strand of noodle.<br /><br />It does not have to be special. It just have to be pure comfort. Set the noodles aside after cooked, and discard the water - do not re-use the water)<br />Sea salt and ground white pepper to taste<br /><br /><i>Directions</i>: Heat a little oil in the pot, fry the ground meat, breaking them up to smaller bits in the process of frying. After almost cooked, dish out, set aside (omit this step if vegetarian).<br /><br />There will be some oil left in the pot, add the chopped bottom white parts of green onions, carrots and celery, garlic and fry for 2-3minutes, add the enoki mushrooms, cooked meat (optional), cooked vegetables, mix well.<br /><br />Add some water and allow the entire mixture to come to light simmer (<span style="color: blue;">Note</span>: This is not an entirely soupy dish but also not totally dry like fried noodles. Therefore, not a lot of water is added. You can refer to the images and notice that the noodles are sitting in a small quantity of (very flavorsome) soup/broth. If you want it to be noodles soup, add more water however remember to adjust the seasonings appropriately). Gently and slowly stir in the egg. When the egg slowly cooks, add the cooked noodles, mix well, salt and ground pepper to taste, and when it comes to a light simmer again, garnish with greens of the green onions, turn off heat. Drizzle few drops of sesame oil if you prefer. A salad dressing can make or break a salad; and a homemade dressing is definitely way healthier than store-bought.<br /><br />You know what? I used to think that salad dressing is out of my world, something that appears, kinda sophisticated. Well, it is not; especially when I K-I-S and found that Keeping-It-Simple actually works in my favor, and flavor. Something so simple that it does not bog you down when you want to prepare it. The only reason for taking extra effort to de-bone chicken drumsticks is to "save and keep" the bones for making stock. Part of the week's menu-plan requires the use of some chicken stock, so instead of buying chicken backbones separately, bone-in chicken drumsticks work fine as an alternative - the chicken bones, and meat can both be used.<br /><br />In our family, we don't shy away from chicken "dark" meat, meaning parts of the chicken e.g. chicken thigh or leg, that comes with fats/skin. For that, Trader Joes organic chicken drumsticks ($1.99/lb, $3+ for five organic chicken drumsticks) is one of the best-value organic chicken around. Bone-in chicken are very flavorful when making <a href="http://teczcape.blogspot.com/2013/04/lemongrass-chicken-curry-assam-cabbage.html">chicken curry</a>, <a href="http://teczcape.blogspot.com/2014/04/cordyceps-chicken-soup.html">chicken soup</a> and <a href="http://teczcape.blogspot.com/2011/09/rosemary-thyme-garlic-roast-chicken.html">roast chicken</a>, for example.<br /><img src="https://farm4.staticflickr.com/3907/14888683956_c29a5d1aed_z.jpg" /><br /><br />It may not be a lot of bones (and flavor) from de-boning five or even two chicken drumsticks, but it is better than water as liquid base, and very useful when cooking a small-serving pot of rice or congee/porridge.<br /><br />De-boning aside, this is an easy organic chicken recipe that makes use of <a href="http://teczcape.blogspot.com/2014/08/basil-walnut-pesto.html">homemade pesto</a> as the marinade. This is the first time I tasted Chicken Adobo and I tasted it from my first Chicken Adobo cooking attempt. Two firsts! Well, nothing to fuss about or make a big announcement of. You can use Jasmine rice), rinse 2-3 times then soak in water for about 30 minutes.<br />Homemade chicken stock, divided use<br />Salt<br /><br /><i>Directions</i>: Saute the shallots and garlic till fragrant. Add some stock if mixture is too dry. Add rice, mix well with shallots and garlic. Then add the remaining chicken stock (the amount of chicken stock used will be the same amount as how you would cook rice with water - just that the water is now substituted entirely with chicken stock). Cook the rice over the stove-top for 15-20minutes, till fluff up the rice a little to entire bottom of the rice is not over-cooked and rice is the surface if not under-cooked. Turn to low heat, cover pot, then let it steam/steam for 5 minutes more. Turn off heat. Omit if vegetarian)<br />1/4 wedge cabbage, julienned/thinly sliced <br />Some water<br />1-2 tsp organic light soy sauce<br />Salt and ground white pepper to taste<br />Noodles, rice vermicelli or angel hair pasta <br /><br /><i>Directions</i>: Saute the shallots, green onions, garlic till fragrant. Add the ground chicken, breaking up to small bits while frying (omit if vegetarian). Add mushrooms and fry till slightly tender. Add soy sauce and pinch of white pepper and mix well. Add 1/2 cup water/chicken stock, cover pot and simmer for 5-8 minutes. Add the squash and mix well. Add more water/chicken stock till mixture is partially submerge. Cover pot, simmer for about 8-10  minutes till squash is cooked. Add cabbage and simmer for another 3 minutes. Poached Chicken 水煮鸡

I could have <a href="http://teczcape.blogspot.com/2015/04/steamed-chicken-with-mushrooms.html">steamed the chicken</a> (try <a href="http://teczcape.blogspot.com/2015/04/steamed-chicken-with-mushrooms.html">Steamed Chicken with Mushrooms</a>), but there was "something" I had to do to extract the chicken "essence" so that I could cook the rice to fragrance. That "something" is chicken stock. So I turned to poaching the chicken which at the same time will render it tender, moist and succulent.<br /><img src="https://farm4.staticflickr.com/3894/15291147575_41a2775f10_z.jpg" /><br /><br />It is actually not that difficult. I should have done this more often with the best of both worlds - (1) tender, moist succulent chicken to savor, and (2) flavorful stock for cooking.<br /><img src="https://farm6.staticflickr.com/5568/15104435450_7dc4e5c5b1_z.jpg" /><br /><br /><a name="more"></a><iframe align="left" frameborder="0" marginheight="0" marginwidth="0" scrolling="no" src="//ws-na.amazon-adsystem.com/widgets/q?ServiceVersion=20070822&OneJS=1&Operation=GetAdHtml&MarketPlace=US&source=ss&ref=ss_til&ad_type=product_link&tracking_id=anestofo-20&marketplace=amazon&region=US&placement=B0076NOGPY&asins=B0076NOGPY&linkId=LQNBODMLM4IJLPF6&show_border=false&link_opens_in_new_window=true" style="height: 240px; padding-right: 10px; padding-top: 5px; width: 120px;"></iframe><b>Poached Organic Chicken  水煮鸡 </b><br /><i>Ingredients</i>: <br />8-10 organic chicken drumsticks<br />Water - sufficient quantity to submerge the chicken <br />1 thumb-size ginger<br />2-3 green onions<br />Pinch of salt<br />1tbsp soy sauce + 1 tbsp sesame oil<br /><br /><i>Directions</i>: Set the water to boil. When boiling, add the ginger, green onions, 1 tsp salt, gently add the chicken drumsticks, then set the heat to low-medium (or even low), and allow the chicken to poach in mild simmering liquid for 45-60minutes till the chicken is cooked through (<span style="color: blue;">Note</span>: Remember, the chicken should not be coming to a boil) . After an hour or so, dish out the chicken to cool (you can immerse immediately in ice-bath to lock the moisture of chicken and render it more tender but I omitted this step). When cooled, shred the chicken, and toss/season with 1tbsp soy sauce + 1 tbsp sesame oil.
