Tempeh, Broccoli, Cabbage, Avocado & Kiwi Salad 印尼豆豉蔬菜主食沙拉

With <a href="http://teczcape.blogspot.com/search/label/workout%20meals">salad and grain bowls</a> incorporated into our family meals, there are endless possibilities to switch up the vegetables, grains and proteins.<br /><br />For choice of meat proteins in our family, it is usually (almost surely) chicken e.g. <a href="https://teczcape.blogspot.com/2017/12/broccoli-cauliflower-chicken-quinoa-bowl.html">Steamed Vegetables with Quinoa and Rotisserie Chicken Bowl</a> , <a href="https://teczcape.blogspot.com/2017/08/asparagus-cauliflower-chicken-quinoa.html">Asparagus and Cauliflower with Quinoa and Chicken</a>; and for seafood-based protein, it can be either fish or shrimps e.g. <a href="https://teczcape.blogspot.com/2017/10/shrimps-avocado-radish-mixed-vegetables.html">Avocado, Radish, Mixed Veggies and Shrimp Bowl</a>. As my homemade protocol, a meal-salad bowl is made up (at least 50% of the bowl) with mostly vegetables - salad greens always on the bottom, then built up with hardier vegetables (can be steamed or raw) such as broccoli, cauliflower, green beans, green cabbage, red cabbage, zucchini and red onions. Or roast any fresh batch of autumn squash.<br />10 mushrooms, brown or white mushrooms, stems removed<br />1/2 red bell pepper, sliced to bite-size<br />2 small Yukon Gold potatoes,  thinly sliced<br />Handful of green beans, sliced to finger-lengths<br />2 cups broccoli florets<br />2-3 cloves garlic, minced<br />Salt and pepper, to taste<br /><br /><i>Directions</i>: Roast the mushrooms and bell peppers in 400F oven for 20mins. With 10 mins remaining from roasting mushrooms and bell peppers, add in the leftover squash (wrapped and sealed in parchment paper) and reheat for about 10 mins. After about 20 mins, mushrooms, bell peppers and squash should be done. While roasting, steam potatoes with minced garlic, salt and pepper for about 15mins, then when almost cooked, add in broccoli and green beans and finish off steaming in another 5mins. Add the roasted squash, bell peppers and mushrooms to the steamed potatoes and vegetables. Season the shrimps with minced garlic, oregano, a little olive oil, salt and pepper. While shrimps are roasting, start building the bowl up with salad greens at the bottom, some red onions over, drizzle a little dressing. Not only it is healthy and nutritious, it is also a balanced meal if you build it correctly. This is also a great way to incorporate the day's veggie and fiber intake.<br /><br />The more often I make <a href="https://teczcape.blogspot.com/2017/07/mixed-green-salad-with-avocado-dressing.html">salad-bowl meals</a> e.g. <a href="https://teczcape.blogspot.com/2017/05/asparagus-chicken-with-turmeric-dressing.html">Chicken, Veggies and Potatoes with Turmeric Dressing</a>, <a href="https://teczcape.blogspot.com/2017/07/mixed-green-salad-with-avocado-dressing.html">Mixed Green Salad and Egg with Avocado Dressing</a>, the easier it gets.<br /><br />This is typically how I create my salad-bowl meals with an emphasis on vegetables, packed along with lean proteins, fiber-packed grains and good fats.<br /><img src="https://c2.staticflickr.com/6/5522/31112828356_6e26b02045_z.jpg" /><br /><br /><b>Vegetables</b> - Target a variety by using colors e.g. red (bell peppers, beets), orange(carrots), yellow (corn), green(broccoli, green beans, zucchini), purple (cabbage) etc.<br /><br /><b>Proteins</b> - Egg is typically my first choice as it is the easiest complete protein to prepare. Add legumes/beans, tofu/<i>tempeh</i>, or your choice of lean protein (e.g. chicken breast, wild salmon, sardines)<br /><br /><b>Grains /complex carbohydrates</b> - Quinoa, millet, potatoes,sweet potatoes, brown rice, wheat pasta, legumes/beans, lentils<br /><br /><b>Good Fats</b> - extra-virgin olive oil which typically manifests as the <a href="https://teczcape.blogspot.com/2014/06/flax-oil-vinegar-honey-chickpea-salad.html">salad dressing</a>; <a href="https://teczcape.blogspot.com/2017/07/mixed-green-salad-with-avocado-dressing.html">avocado </a>which can also be <a href="https://teczcape.blogspot.com/2017/07/mixed-green-salad-with-avocado-dressing.html">salad dressing</a> or stand-alone as an element to the salad bowl. Add on the egg, mushrooms, pasta, also the bell pepper and red cabbage. Drizzle with dressing.
